Rosalia Molina makes certified-organic wines in one of Spain's highest altitude wineries. Located in Manchuela (west of Valencia) at more than 1km above sea level, this is boundary-pushing stuff. The vineyards are only treated with natural fertilisers, with chickens, sheep and pigs from local farms allowed to roam freely around them.
